I had always assumed when cooking instructions (e.g. for microwaving your Pop-Tart) tell you to let something sit or cool for however long after cooking, it was a anti-litigation strategy to absolve companies when you excoriate your mouth on an overly Hot Pocket.

But Costco Jimmy Dean breakfast sandwiches have multi-step cooking instructions, with a cooling period in the middle.

After a dozen sandwiches of loose adherence, I figured out that sometimes sitting around is actually an important cooking step. Particularly with microwaved stuff, where one part is superheated and another's still frozen, letting the food sit for a couple minutes gives the heat a chance to distribute. Huh. It's like people are out there thinking of these things!
